Serves 4 (two per person)
1 cup all-purpose flour
pinch of salt
1 egg
1 cup milk
3/4 cup water
1 Vanilla sugar (optional)
Vegetable Oil for frying (1 tsp. oil per crepe)
Preparation:
Mix all the ingredients together with the hand mixer. You could also blend the ingredients in a blender.
Preheat a small non-stick skillet over medium heat, and add 1 tsp vegetable oil. With the ladle add 1/4 cup of the batter and as you pour it in, quickly tilt the pan until the batter is evenly distributed. Cook for about 1 min. on each side. Use a heat-resistant spatula for flipping the crepes. After you are done with cooking all the crepes, use your favorite spread. In my kitchen we use the Nutella, raspberry and blackberry jams with chopped walnuts.
If you want to make a crepe party, you could serve savory and sweet crepes. Make a bunch of crepes and leave it to your guests to fill them with all kinds of goodies. For example, my favorite savory crepe is: 1 tsp. sour cream, cubed hard salami or prosciutto, topped with any soft cheese (goat these, feta cheese) and add some chives. Give it a try!
