Crepe (Palacinke)

In the Balkan countries such as Serbia, Croatia, Bosnia and Herzegovina, crepes are a common, delicious and inexpensive dessert. My mom, who was a busy women, working full time and having two children, would always satisfy our sweet tooth with this home made dessert. She was and still is very much against the store-bought sweets and processed sugars. I remember, as a teenager, my mom and dad would be at work, and me and my girlfriends would make this dessert quickly and we would get really creative with the filling. That was, of course, at the time when there was no delivery and we, the girls, wanted to talk and spend time together, and instead going to the store to buy something, we would make crepes. The best part of this recipe is that every household has all they need to make this recipes at all times. I strongly recommend to make it with your friends and family. It is something that kids can get creative with and that will keep them occupied ;).

Serves 4 (two per person)

1 cup all-purpose flour

pinch of salt

1 egg

1 cup milk

3/4 cup water

1 Vanilla sugar (optional)

Vegetable Oil for frying (1 tsp. oil per crepe)


Preparation:

Mix all the ingredients together with the hand mixer. You could also blend the ingredients in a blender.
Preheat a small non-stick skillet over medium heat, and add 1 tsp vegetable oil. With the ladle add 1/4 cup of the batter and as you pour it in, quickly tilt the pan until the batter is evenly distributed. Cook for about 1 min. on each side. Use a heat-resistant spatula for flipping the crepes. After you are done with cooking all the crepes, use your favorite spread. In my kitchen we use the Nutella, raspberry and blackberry jams with chopped walnuts.
If you want to make a crepe party, you could serve savory and sweet crepes. Make a bunch of crepes and leave it to your guests to fill them with all kinds of goodies. For example, my favorite savory crepe is: 1 tsp. sour cream, cubed hard salami or prosciutto, topped with any soft cheese (goat these, feta cheese) and add some chives. Give it a try!


You can either roll up your crepes or you can fold them into triangles. Enjoy!
